One of our go-to recipes for summer evening cocktails is the incredibly sweet and simple Peach Collins. A play on the traditional Tom Collins, this drink calls for only a few ingredients and takes just seconds to prepare.

- 1/4 Cup of Simple Syrup
- 1/4 Cup of Lemon Juice
- 1/2 Cup of Chopped Ripe Peaches
- 1/2 Cup of Peach Flavoured Vodka
- 1/2 Cup of Soda Water (or Lemonade if you like it super-sweet)
- 2 x Peach Slices

Mix simple syrup, lemon juice, the cup of peaches and about half a cup of ice in a cocktail shaker or plastic cup. If you don't have a muddler, use the end of a wooden spoon and muddle the mixture until the peaches start to break up. Pour in vodka, cover the shaker with the top and shake until blended.
Divide the unstrained mixture between two tall glasses, adding half of the remaining chopped peaches to each drink before filling the glasses with ice. Top the glasses up with your soda or lemonade and garnish with a peach slice.
