Happy Weekend: Fun at Breakfast Time

Weekends should be all about fun, no? Especially extra-long, bank holiday weekends! I'm starting this three-day weekend with a leisurely breakfast in bed (as per...) complete with homemade juice, pancakes, fruit and a few sugar treats, while trying not to think about squeezing into a bikini in seventeen little days...

Table for Two: Berry & Fruit Summer Coolers

My enthusiasm eating delicious food is far superior to the physical pepartion and cooking of food. My Table for Two recipes are the lazy-girls guide to sweet treats, cocktails and cakes which look far more intricate & impressive than they really are... I love a sorbet, ice cream or simple ice lolly to cool down during a  hot summer day, these fresh fruit & berry beauties are perfect for garden parties - or simply to spoil yourself!
You'll Need...
Fruit Juice - My favourite is Wild Strawberry & Blueberry
Mixed Berries & Fruits
Popsicle Moulders
Popsicle Sticks

You'll Need To:
Pour your fruitjuice of choice into your popsicle moulds, to around three quarters full. Fill the remainder of the mould with your fresh fruit. Freeze for about an hour or until the moulds are solid enough to hold a popsicle stick upright. Freeze for a further few hours or overnight. To release the lollies, simply run hot water over the mould. Enjoy!
